What did you cook or eat today (February 2021)?

Lasagna from scratch for my guest :) Took 8 hours to make, 15 minutes to disappear..

Chicken pumpkin pea risotto last night, we didn't have feta to top it off so I stirred in Parmesan, was unbelievably good. With fresh bread buttered to scoop up my plate.
Wife took some for her lunch today, I froze a meal for the butcher.
Tonight a quick meal of salmon on toast.

I've always been reluctant to put prawns in a curry but I had some masala sauce left over (devoid of chicken) so I gave it a try today. It was OK but I'm unlikely to try it again. I think prawns are too "delicate" to put in a curry, however mild it may be.

Oh! I make prawn curries quite a lot - but with a lighter sauce and than I use for meat. If they are good tasty prawns they can be delicious in the right curry sauce. I often add some fish sauce to the curry sauce too. I don't cook the prawns first but simply heat through in the sauce for a few minutes until cooked. If you fry them first there is a danger they get overcooked in the curry sauce. I don't think I have a prawn curry recipe on the forum - a situation which must be addressed.
 
Made Greek style BBQ lamb chops with roast lemon potatoes. Bit of a back story: whilst on holidays in North Queensland recently I visited a Greek Restaurant that had good reviews. Some of the food was really nice, but was really looking forward to the Greek lamb chops, which unfortunately left a lot to be desired. So as soon as got home, I couldn't wait to make them myself which I did today.

The curry sauce (ex chicken tikka masala) was already cooked so it only needed to be heated. The prawns (after frying) went in after it was heated. Unfortunately our fresh water prawns are not very tasty.

I use to make a Madhur Jaffrey Goan prawn curry quite a lot. You didn't add the prawns till the last 2 minutes. It wasn't my favourite, but my then partner use to love it. I found it better substituting squid, adding it earlier, and simmering it out longer till the squid was tender and the masala was more developed.
