What did you cook or eat today (February 2022)

I forgot to defrost the minced meat earlier, and my postcovid brain is so slow, but now I got it, I could do tofu cubes in a sauce, to go over the rice...whilste meat is defrosting...
I had ordered this tofu a week ago, this is the perfect time to use it.

What a good idea! Will do that! I rarely have pineapple at home, but I might as well change things up a bit. Do you think apples would work as well?
I had considered that pineapple might not be readily available where you are or you might not have it on hand, but was just thinking that very thing. Some tart apples and a touch of cinnamon with vanilla extract, or maybe some apple sauce. I do prefer pineapple to apples but I think nearly any fruit would be good in pancakes. I like bananas in them too, and in the past I have used a combo of banana and crushed pineapple that was very good. It's a great way to use up overripe bananas. I like them with blueberries, too. I am not sure how strawberries would work out, I would probably just use those fresh on top instead of cooking them inside.

If you ever do encounter whole, fresh pineapple at a reasonable price, it's great for snacking. I usually core it, take off the outer "husk", and chunk it, then keep it in the refrigerator in a container. It's got something called bromelain in it that is beneficial for the digestive system. At any rate, whatever we don't use goes into a ziplock bag or a freezer safe container and I freeze it to use later for pancakes. I just thaw it and run it through my food processor (or a blender would be fine).

I think crushed canned would work fine, but fresh/fresh frozen is probably better for you.

Edited to correct an error: bromelain, not bromide. My memory did not serve me correctly!

Have you ever tried miso soup with tofu chunks in it? Probably one of my favorite ways to eat tofu.
 
Most people I know don't like it. It's usually what you eat when you are sick, and a lot of people associate it woth bland, sick person food.
I love just about any kind of fish, but in the US it's not something we typically boil. Doesn't mean I wouldn't eat it! I might prefer it broiled or prepared otherwise, however.
 
Not a lot today. We are still full from last night.
Cheryl bought home made apple crumble made with apples from a friend of theirs.

That's kind of like an apple cobbler I take it? I think people here make apple crumble, I seem to recall it. I don't have much of a sweet tooth though I do like Dutch apple pie (streusel topping).
 
Starting the breakfast potatoes with a bit of red bell pepper and onion. I'll add some chopped mushrooms in a bit, they tend to cook more quickly than everything else.
