You and potatoes for brekky.I made a potato hash for breakfast and I incorporated some of the leftover root vegetables and the juices from that chicken dish I made the other night. Fried up the potatoes nice and crisp and topped with runny eggs, yum.
If you ate them you would get it. I don't always eat, I usually just cook up some for hubby (3 eggs and a plateful of potatoes), but today I actually had a scoop and 1 fried egg. Pretty much spectacular.You and potatoes for brekky.

Well that's a different animal, I wouldn't make a hash brown and put an egg on it, I would eat it on the side plain.I know, looking I the freezer during the week I spotted hash browns and I remembered I need to make these for brekky during the week. I will do this and post so you and caseydog

Hash potatoes and onions cooked in bacon grease are phenomenal.My mate butcher let me down with my last order of 2kgs bacon. He never ordered it. The stuff he gets made is real good. I always like 1kg as back up for the freezer.
Consequently the wife went without today.

As I saidYou have a cuppa tea for breakfast, and sometimes a cookie/biscuit. If you want to understand potatoes for breakfast, you have to have them fried with eggs and bacon or sausage. You have to go big.

I peel and slice up potatoes and sauté them and about halfway through, I add slivers of onion or maybe red bell pepper. I fry them up until they are tender inside and crisp on the outside, but it's not a formed patty. Then I fry eggs in a separate pan and serve the potatoes on a plate underneath the eggs.
We like the runny yolks melting into the potatoes. It's fun to break the yolk and let it drip down on the crispy hash, yummmmmmmm.I love to mix my eggs and potatoes. It is somewhat like a Spanish tortilla (Spanish omelet).

I don't mind a tortilla/frittata type dish, but my favorite way to do it with potatoes and eggs is runny yolks.
