Hainanese Chicken Rice

Hainanese chicken rice was one of my regular meals here but it was a carry oot. I changed to char siu noodles because the chicken rice stall could not be relied upon to be open.

That looks pretty good and that chili looks lethal

There are 3 chicken rice stalls about 100m from my house and when I go there I usually go for the 'roast' version (actually I watched couple of them do it - they actually steam and then deep fry, so it's no wonder I couldn't replicate it easily). The white 'Hainanese' version is quite easy to do at home, but I cheat using a packet mix for the rice in addition to the stock (anyway, I saw the hawkers using Knorr chicken powder so I don't feel bad!).

The sauce became more lethal as time went on. I think she was trying to determine the limit of my resistance.
