What did you cook or eat today (January 2022)?

Seems I have a few meals to catch up on yet again.

The lunch time salads. Spinach, rocket (or roquette), grated carrots, cucumber, spring onions, tomatoes, green beans or beetroot, sprouted peas, beans & lentils, avo, marinated tempeh, aubergine, almond feta, olives and a homemade avocado and red rice roll.




I've been making our own avocado and red rice rolls just recently. They're really easy to make and just about every shopping center food court will have a shop that sells nothing but rice rolls with various fillings. I have some red glutinous rice and nori sheets so thought I'd make my own. It's much cheaper and i can add the soy sauce or tamari sauce before i roll them (i add it to the rice at the same time as the rice wine vinegar) so it doesn't go absolutely everywhere when it drips out of the bottom of the roll, and tricked down your hand passed you wrist , along the forearm and eventually to the elbow...

Chicken wings are hard to find in the stores around here, again. After Super Bowl weekend in a few weeks, they will be impossible to find for about a month, if not more. When you do find them, they'll be priced like steak.

With it being playoff weekend, was surprised to find them yesterday, but Kroger was well-stocked. I had my choice of Kroger, Champion (never heard of those before), Tyson, or Miller's (whole wings, and the only ones not frozen and also probably the closest to me geographically - I think they're from Indiana).

I went with the Miller's which is the chicken I usually buy from Kroger anyway, and for whatever reason, I actually kind of like separating wings myself.

BTW, your Cincinnati Bengals are going to the AFC Championship game next week. One step short of the Super Bowl! of course, the San Francisco Forty-Niners are in the NFC Championship game. The two times Cincinnati made it to the Super Bowl, they lost both times -- to San Francisco. :facepalm:

On the other hand, my Pittsburgh Steelers will NOT be winning their seventh Super Bowl this year. :cry: If theForty-Niners win the SB, they will tie my Steelers for the record with six SB wins.:eek:

I'm guessing you don't care about any of that. :laugh: But, Cincinnati could have one of these in a few weeks!:highfive:

Update: The chili is done, and it is good. I tasted the "sauce" when I first started the simmer, and it was very hot, but didn't taste very good. It was rather bitter. But, my experience with low and slow cooking told me to let it ride, and judge it when it is done. It took three hours for the beef (chuck) to get fork tender. When I tasted it at that point, it was WAY better. Bitterness... gone. Flavor of the chilis, much, much better. By flavor, I don't mean heat. The heat mellowed out over the long cook, but was still there. Instead of burn your mouth heat, it was make your head sweat heat, which is what I like. But, the flavor of the chilis was very pronounced. I can now see why this chili doesn't need tomatoes. The flavor of the chilis was enough.

I'll take pictures later, and post the recipe and more comments. But, I'm glad I finally cooked this. It is a little bit of history, that happens to taste good.

I ate a "Bowl of Red" for dinner, with some freshly baked cornbread. A little bit of history in a bowl, that is also very good. I didn't miss the tomatoes one bit. Will I always make my chili this way? No. But I will make it again, perhaps for some friends who have never had it.

I am so sorry your daughter tested positive, hopefully she doesn't get symptomatic, or at least very, very mild if so. And I hope you stay well. :hug:
Oh thank you, that is so sweet of you. She had mild temperature yesterday, a bit of a sore throat and felt like resting, except for a few gentle dances in the evening. She slept well, and has no temperature today, or this morning. I hope it stays that way, and that I don't develop symptoms.:):)

I would love to try making almond feta. Almondswere on sale last week, so I have some, that I usually roast for snacks. I will see if I have all that is needed. I was recently enchanted by an oat/chickpea tofu recipe. I might do that as well.
And the avo rice rolls look amazing. It seems I do not digest nori very well, no idea why, but surely I could wrap those in lettuce ...lovely inspiration, thank you for sharing!
