What did you cook or eat today (January 2022)?

Yesterday afternoon I made pancakes, of wholegrain flour, oat milk and an egg, smeared with gluten free choc hazelnut spread, it was very very tasty. I mean, how could it not be.

Now I am baking onion, carrot, red cabbage sliced/shredded, seasoned with olive oil, salt, garlic powder. Will do burgers of minced pork/beef soon. And we have a new creamy soup : cauliflower, kale, carrot.

I would love to try making almond feta. Almondswere on sale last week, so I have some, that I usually roast for snacks. I will see if I have all that is needed. I was recently enchanted by an oat/chickpea tofu recipe. I might do that as well.
And the avo rice rolls look amazing. It seems I do not digest nori very well, no idea why, but surely I could wrap those in lettuce ...lovely inspiration, thank you for sharing!
I'm certain that my recipe for almond feta is on CB. I'll look in the morning if you've not found it by then.

I had my tea and ate a pancake, then made 3 for hubby while he showered, then I washed the pan and loaded dishes into the dishwasher. I made myself a cup of coffee and a big cup of ice water and when he came into the kitchen, I told him I was going back to bed. I asked him when he finished eating to please rinse his plate and fork, put them into the dishwasher, and start it. Yes there is soap in it already. I crawled into bed and 5 minutes later I hear, "How do I turn this thing on?" :laugh:

My wife cant even turn the oven on!!
