What did you cook or eat today (January 2023)?

Tacos for breakfast. Best ones yet. She makes the tortillas per order. One chorizo and one beef. Will go back to this one before I leave.

I had another look at the "guacho" recipes this morning. Interesting - there seem to be several variations on a theme. Most of the recipes serve the dish as if it were a type of Spanish "asopado" ie. like a soup with rice in it. Judging from your photos, your chef seems to have taken a different twist and set the rice apart.
The recipes usually start with frying onion and garlic, and adding paprika, culantro, achiote oil and s&p. Some recipes then call for the seafood/shrimp to be sautéed, followed by adding the raw rice and then cooking the whole lot through. Other recipes suggest cooking the rice first, sautéeing the seafood apart, then mixing all together right at the end. Some recipes use fish stock, others use a mixture of fish stock and coconut milk. So there you have it - I think it´s a recipe you can play around with.

When I got home, I momentarily considered making a simple recreation of some of the things I've eaten in the past week. But, I want to do it justice. I want all fresh seafood, and no surimi. And, beyond that, I think now is finally the time for me to prepare a dish with calamari. I love the other elements, but the calamari was such an important part of it. That alone will make the prep interesting, and more challenging, than any seafood dish I've ever made before.

My official taste tester aka DH, gave it a big thumbs up, so I held back 2 pieces just for him.
I like to make different kinds of desserts to take to Bingo, mostly because we get to try a small portion too.
DH: But why can't you make this kinds stuff just for us?
Moi: UM, it's too much sweets in the house to tempt us
DH: OH, well ... (mumbling from the other room)

We haad P.F. Chang bowls since they were on BOGO last week at the grocery and i wanted a meal I didn't have to cook. I had Chicken Pad Thai but could only eat about half because it was too spicy for me and Craig ate the rest. He had Dan Dan noodles, which he said were spicy but nothing on the Pad Thai.
