What did you cook or eat today (January 2023)?

When I got home, I momentarily considered making a simple recreation of some of the things I've eaten in the past week. But, I want to do it justice. I want all fresh seafood, and no surimi. And, beyond that, I think now is finally the time for me to prepare a dish with calamari. I love the other elements, but the calamari was such an important part of it. That alone will make the prep interesting, and more challenging, than any seafood dish I've ever made before.

If by "fresh" you mean never frozen, you probably won't find it in any stores. Frozen seafood is not a bad thing. More important is to check the source of the seafood, and look for wild-caught USA if possible, or at least wild-caught from a country likely to have good food regulations.

We didn't get home until 7pm tonight which is an hour after we've usually eaten, so it was a quick and easy meal. Chickpea pasta, garden peas, mock duck and home-made pesto.

I had to laugh when hubby said he could taste the pine nuts better in this one than the previous pesto. This one was made with pine nuts the last one was macadamia nuts! Lol

It may look like a lot of pesto, but it's actually a lot of garden peas with a little pesto over them. It's much more fluid that the macadamia pesto, and its been 'warm' here all day (30°C or 85-85F). It was out to defrost, so wasn't in the fridge.
