What's odd or weird about having a cheese & tomato filling for a jacket potato with a touch oregano?

That is a rather unusual recipe for a baked potato. Scamorza is a cheese I don't think I can get around here, although mozzarella could be used, it seems... and that's something I wouldn't have thought of. Diced tomatoes is another. Oregano doesn't really surprise me.

I'm sure it is good, and maybe common in Italy, but for me, it is unusual... or weird, which isn't a bad thing.

Common fillings at home (growing up) included (to name just a few)
  • Butter (just by itself)
  • Hummous
  • Chilli
  • Tuna
  • Baked beans
  • Cheese and onion
  • Tuna and mayonnaise
  • Any melted cheese (Lancashire or Wensleydale were my favourites)
  • Philadelphia cheese
  • Garlic and herbs boursin
  • Butter
  • Tuna & cheese
  • Pineapple & ham (one of my brother's favourites! )
  • Mackerel (my grandmother's favourite)

I love to pour chili over my baked potatoes. That, and some grated cheddar. The other way I often stuff them is with butter, sour cream, grated cheddar and chives.

Even though MyPinchOfItaly's baked potato is perhaps "weird" to me, I like the sound of it, and may try it... probably substituting the scamorza, which I really don't think I can find.

Now, for you purists, I have it on good authority that this particular shepherd did indeed develop quite the friendship with his fuzzy charges, and that’s why his particular pie was meatless, but still delicious. 🐑 🥧
I had a friend who was chef on an oil platform once make me cottage pie with quinoa and it was seriously one of the best I ever ate! So I believe you that this was good too.
 
Due to the imminent start of Chinese New Year my preferred char siu noodle stall was closed today (and likely to be closed all next week). My wife located an alternative stall and ordered through the internet. It was delivered earlier. Whilst it was adequate, it contained too much MSG which spoilt the dish for me. Of course it was supplemented by my own pickled cayenne red chillis.

Oh, weird? Interestingly enough, I thought I hadn't actually made anything special... it came out a bit like this mostly because I had some leftover scamorza cheese and the rest of ingredients to pair came quite naturally.
Perhaps because they are also somewhat of an ingredient for a pizza and scamorza usually is a good alternative to replace mozzarella.

I like to stuff them with butter and grated cheese too, sometimes I also add some herbs.

Scamorza can be replaced with mozzarella even if Scamorza (smoked) works better to me. Maybe you can add Provolone if you are able to find it there.

A baked potato restaurant I used to go to also had a warm shrimp and crab Newberg type filling. They had all kinds of fillings but I don't remember them as it's been too long, just the above and cheddar, bacon, chives, sour cream and butter, which were my go tos. The potatos were huge, almost 2 pounds each and they cooked them in a pizza oven.
