What did you cook or eat today (January 2025)

Freestyling with eggplant, beans, tomato and more.
Just a little bit of Thai curry paste that was bought in Thailand and is nothing like the stuff we can get. Much much hotter. I learned the hard way.
I ended up with a very tasty meal

We had a Chinese take-away for tea. Lu got in a single portion of Chicken in oyster sauce with rice. I had some rice soaked with plenty of the gravy, a bit of chicken which I shredded before eating and some of the softer veg.

It was marvelous, I enjoyed every mouth full

Thank you. I remember the hydration % at 70% so all I need please is the starting flour amount and the times for the steps.
