Many in my area would argue that the whole point of meatloaf is to have it for sandwiches the next day. Standard diner fare here.
Unfortunately true. I know people that rave about meatloaf. I got so sick of eating it growing up (it was like a big loaf-shaped meatball with ketchup on it, UGH), and it was not one of my mother's finer dishes. I would always just double up on veggies and take the thinnest, smallest piece I could get away with not eating, and I did try to shovel it under a napkin without anyone noticing. I don't think I have eaten it in over 40 years. Mom made a good lasagna and her pot roast was good. She was a far better baker than she was a regular cook, so a lot of standard fare isn't my cup of tea.

Not me. Meatloaf is one of my top five favorite dishes. I could eat it week after week.

Funny story: my wife can't cook. Cannot cook. Nada on the cooking. Can't scramble an egg.

However, when we were dating, she wanted to impress me, so on my birthday, she made meatloaf (no doubt with a lot of assistance from her mom).

To this day, the one thing she'll endeavor to make, about once a year (not necessarily on my birthday), is meatloaf.

Whatever recipe she uses (she won't tell me), the one way you can tell my wife made it is the chopped peppers and onions - the size of big wood chips. She has no patience with anything in the kitchen, including chopping.
 
Hubby can cook a few things, he just normally doesn't because I can do it better and I make much, much less of a mess. And we eat rather late so I don't want to be cleaning the kitchen at 10:30 PM or deal with a stack of dishes and pans in the morning.

My wife is the type who says, "This says bake at 350F for 30 minutes, so can I put it on 700F for 15 minutes?"
