Mine's going through some serious health issues right now, and I can tell he's extremely worried and anxious about the whole thing. I saw him this weekend (from more than six feet), and he didn't look all that well, and he just sounded...kind of tired and defeated, I guess. Besides himself, he worries a lot (and does a lot) for our parents.

I didn't know that the aubergine version was considered to be more expensive. Surely aubergines have always been cheap and plentiful in Italy? To be fair - I don't really know!
The key word is "back in the day" meaning, in Greece after WW2.
The Great Famine (Greek: Μεγάλος Λιμός) was a period of mass starvation during the Axis occupation of Greece, during World War II (1941–1944). The local population suffered greatly during this period, while the Axis Powers initiated a policy of large scale plunder.
 
Rich mans Moussaka, my friend Niko G's father was a communist partisan in WW2 like my wife's Serbian and Croatian grandfathers . The country had been raped by the Axis powers. Then their was the Civil war. so for many years after 1949 agriculture in Greece was a mess. Potatoes were the cheap alternative. They were grown as a preference because they cold be stored for the winter. "Very Rich" persons Moussaka uses Aubergine and Courgettes.

You got me craving moussaka. What do you do to make the topping? I use yoghurt and egg.

I think I must have had a senior moment when I wrote 'Italy'! I meant Greece, of course. Thank you for explaining.
 
Mojo marinated grilled chicken, Cuban style black beans and rice. After I pulled the chicken from the marinade, I brought the marinade to a boil to use as a sauce. Black beans were canned. I made a sofrito first then added the beans and let them cook low and slow for an hour or so.
