What did you cook or eat today (July 2023)?

Tried out two more very basic kettle cooks.
This one, meatballs in an onion and red wine soup with mash potato was tasty. The other was unsurprisingly ’orrible! Will write it up in the Kettle Cooking and Food on the Move thread later.

Dinner was Instant Pot beef stew. Didn't have to prep much, and my kitchen stayed cool.

I put my instant pot or slow cooker outside the back door on a table so the heat from cooking stays out there, works pretty well.
The slow cooker has a roast and bake function too so I often put a couple of chickens in there to roast, wouldn’t dream of doing a roast inside in the summer but being British means our limbs drop off if we don’t have one every now and then 😆
 
I’m visiting my mom in Omaha this week. She was supposed to visit me, with my brother, but she's been having mobility issues, so I went to visit her. I was planning to only stay from Friday to Monday, but I saw how difficult it was for her to get around, and I decided to extend my visit. Fortunately, I brought my work computer with me.

We're planning to make things together this week, which is a lot of fun. Yesterday, we made pan fried tilapia:

The filets were first dipped in corn flour, then breaded with panko breadcrumbs, and finally fried in butter. We made brussels sprouts with chopped-and-rendered bacon as a side.

She quartered the sprouts, which impressed me: I didn't think she had the manual dexterity, but I'm very happy that she did.
 
Today and tomorrow planning on sat night meal here for 4 close friends
Sat : oyster entree in shell.
Blue cod battered beer dip. Fried.
With salad and fries.
Brulees
Sun : Harry's 10th birthday. His choice.
Chicken croquettes
Butter chicken
Store bought cheesecake.
It will deplete my croquettes almost. 16 needed.
Buying stuff tomorrow. Blue cod is $62 kg atm. Sat night will include euchre.

Hey, that must be a big slow cooker to fit in 2 chickens! I use a counter top halogen cooker to roast chicken and it really doesn't heat up the room at all. Anyway - its not even hot in the UK right now which suits me just fine.

It is in my house, I started cooking a lot of stuff outside a week ago 😆

It is a big slow cooker with a rectangular shape pot so you can fit two small/medium sized chickens side by side.
Initially I bought it because the pot can go on the hob so it's easy to adjust the flavour or add final ingredients at the end of cooking (or to fry of ingredients if you wanted something seared at the start) but it's a great shape for large and small cooks so I've hade a ridiculous amount of use out of it.

I find even the small amounts of heat hot food gives off adds to the temperature in the kitchen, very happy with it doing its thing outside.
