What did you cook or eat today (July 2023)?

I’m still in Omaha with my mom, and she wants me to cook. When it comes to food, Nebraska is known for two things: beef and corn. Of course, I had to combine them. And, then, add more things to them.

First, I dressed the steak and potato wedges with a mix of oil, savory, and roasted garlic:

Then, I put the potatoes in the oven. I'd normally wait until the potatoes were halfway done before starting the steaks, but these were absolute monsters, so I put it on a lower heat for a longer time:

Look at how beautiful they are. Can you believe that these sirloin gems only cost $7.99/pound? Nebraska loves their steak.

Next, I sautéed mushrooms.

My mom wanted peppers and onions, so I sautéed some of those, too. And, of course, the corn was boiling while all this was going on. The potatoes were a little bit before the steaks, which took a LONG time to cook through, even to medium rare.

Still, it was worth the wait.

Kung Pao Brussels Sprouts. I made this with my mom today. I’m going to have to post the recipe, but I’m making an adjustment: she can’t take spicy things, so I will have to update that part of the recipe. Still tasty, however.

Very inventive. But, I thought Nebraskan's were known for their spicy foods.

Winn Dixie had New York strip steaks as 1 of their loss leader sales for the weekend at $6 a pound. We got a pretty decent sized one that was almost 2 inches thick. So, I used a third of it for carpaccio with arugula, ParmR, a Dijon aioli and capers. The other 2 pieces were individually wrapped and frozen for beef tataki or more carpaccio.

Pasta salad with bocconcini, zucchini, roasted red bell, and very thinly sliced red onion. Dressing was a creamy vinaigrette/pesto thingy. New dressing to us but pretty good.
