What did you cook or eat today (July 2023)?

No pic, but I’ve also already put my new cookbook to use - one of the aspects it stresses is no waste, everything gets used, so I turned the potato peels into some hearty potato chips/crisps, and those were an excellent little appetizer.

From tonight’s meal, the only waste was the cooking water (which she also saves, but I’m not ready to go that far yet).
 
Dinner last night was Crawfish Etouffee, a cajun staple (there is also a creole version). I had some Louisiana crawfish tails in the freezer, and the package had a decent looking recipe on the back, so that was dinner. I doctored up the very basic recipe on the package a bit -- it was more of a framework than a full recipe. It turned out to be very good.

Thanks. The recipe called for AP, which I thought was weird. I would think that bread flour, or at least a mixture of AP and bread flour would produce a chewier pretzel. I would (should) have added diastatic malt. If not for pretzels, I don't know a more perfect opportunity to use diastatic malt powder for what it does to baked goods. Next time I will.
 
I cooked for my cousins and aunt last night. I made shrimp and seared sea scallops over pasta with sauteed mushrooms, shallot, red and yellow bell peppers, roasted garlic, and baby asparagus in a lemon-butter white wine cream sauce and Cajun seasoning with shredded parmesan and herbs. Yum.
