What did you cook or eat today (July 2023)?

Chicken stir-fry (chicken breast, broccoli, onion, sliced mushrooms, and white sauce), and fried rice (jasmine rice, onion, soy sauce, and scrambled egg) for dinner last night.

I'll have a Taylor ham (pork roll) and cheese sandwich for lunch.

My favorite pork roll isn't Taylor brand, but It's still called Taylor ham. I've worked at places that sell Taylor ham that is actually Trenton brand. It's just custom in New Jersey to call all pork roll Taylor ham.

This is what I like.

Well I got a new doctor and I met him for the first time yesterday. He was going over my blood work from January and noted that my cholesterol and triglycerides were slightly elevated. They never have been before and I pointed out that it was winter and shortly after the holidays. He pointed out that I was now in my 60s so it put me more at risk for a heart attack or stroke and suggested a low dose statin drug. I said I was pretty sure I could fix it with a few dietary changes like eating less dairy and increasing my fiber intake so I started today with blueberry oatmeal pancakes. I bought some whole grain cereal and almond milk for other days.

I still use buttermilk and egg in the batter and cook them in butter...baby steps, you know?

Edit: I just looked at my test results online (my physicians' group has my chart on a secure website) and my triglycerides were not up, only my cholesterol (slightly) and my HDL was great. My LDL was only slightly up. So I am pretty sure I won't have to take any drugs for it.

I am pretty tempted to go eat some leftover ribs and mashed potatoes and completely sack my breakfast progress, LOL. But we are having big dinner salads tonight with skinless boneless chicken breasts...never mind the bacon and cheese I am going to put on it!

Edit: instead of the ribs and taters I opted for a bowl of lima beans and corn...with butter, salt, and pepper.

I've changed the name of our loo to the gym. I go every morning. Friends think I'm exercising lol.

Too hot (99F) to do any long cooking. I had a Taylor ham (pork roll) and cheese on a toasted, buttered English muffin for dinner. It's supposed to be just as hot or hotter today. No clue what I'll have tonight.
