I have been waking up in the middle of the night craving cookies. Sunday I made Triple Chocolate Chocolate Chip cookies.

3 1/2 dozen should satisfy my cravings for a while.

Lunch Sunday - roasted beet and goat cheese pizza.

Dinner last night - ground meat patty, jalapeno poppers, cucumbers and cantelope from the garden.

I spent yesterday afternoon and a good part of today processing 4 dozen ears of corn.

That pizza is beautiful
 
I've been slightly annoyed for the last couple of hours.

Annoyed because you couldn't find any other recipes for the fideo? Most pasta is 'sort of' interchangeable - its only that some are better at allowing certain textures of sauces to cling to them than others. Other than that they fall into broad categories of thin noodles or medium sized pasta or large pasta which obviously affects how they are used. Fideo is a type of short thin noodle - I'd say any recipe which has thin noodles will work for fideos. Purists may disagree!

There is one here which looks rather good - it actually uses thin spaghetti broken up. The method its using is similar to the way fideos are used in Spanish cooking where they are used to make a dish called fideuà.

No, just annoyed by the main source of most annoyance in life...my employer. 😠

Thanks for the additional recipe - I have 12oz to use up. I did think, while I was toasting the pasta in the skillet, that it would be perfect for my favorite spaghetti recipe. That one calls for breaking long spaghetti into two-inch pieces. These are one-inch pieces, but I'd be fine with that.

Sopa de fideo - no pics because I've been slightly annoyed for the last couple of hours.

I'd never heard of fideo pasta, and when the virus first started and all the pasta was sold out, fideo was all I could find, so I bought it.

Didn't know what to do with it, or what sort of recipe it was made for, so I did a little googling and the only recipe that kept coming up was sopa de fideo, so that's what I made.
Where I come from fideo is a very common dish. They make it in all sorts of ways. Besides the common tomato version, you can sautee it and throw in anything you like. It is always lightly sauteed first though. I sometimes do a chicken version because my wife doesn't like things that are tomatoey. My favorite is to use them just like chinese noodles. Sautee in a bit of sesame oil and cook in chicken broth, add some veggies, usually spiralized . Maybe some carrot and zucchini, or peanuts or anything really. Then a little soy, ginger, garlic, whatever you have. It's always been tasty no matter how I did it.
