Some things, like making puff pastry from scratch, I have never done since that class. I doubt many pastry chefs make it from scratch either.

I'm not good with cakes etc. but I do like to make puff pastry from scratch. I don't think of it as difficult. You simply need to have time - and it is mainly time, not work. The actual 'hands on' making of the dough takes less than 30 minutes in my experience. The rest of the time, is 'resting and chilling' it in the fridge when you can be doing other things like reading a book, watching TV or pottering about.

I fairly often make rough puff pastry too. Its quicker and gives good results.

Yes, I understand. At home I take pride in cooking everything, or nearly everything from scratch. It would be natural for me to explain that I didn't bake the cake even though I could have. I've never been a very good baker. I even took a culinary school class for a year to improve my baking skills. What I took from it was mostly an ability to bake bread. I'm not bad with bread but still not very good with pastries. Some things, like making puff pastry from scratch, I have never done since that class. I doubt many pastry chefs make it from scratch either.

That's not unusual. Like others here, I am a good cook, but not very good at baking. I make a mean chocolate chip cookie, but that's about all.

My wife had some friends round to play Canasta. Guess who got to cook?
Nothing complicated - just a leek and bacon quiche and salad.
I was very proud that all the pastry edging had stayed perfectly in place, until I took it out of the oven :eek:
Never mind - it tasted good and it's not like it was a dish for MasterChef.

I'm the same way. "I made everything from scratch. Except for the yogurt. And the mayo. And the pickles. But I chopped all the veggies."

Puff pastry isn't even a thing I want to make from scratch. Store bought is both delicious and easy. And I normally want to try making everything myself at least once.
