What did you cook or eat today (May 2022)

I just bought some beef short ribs that were on sale at the grocery store. I have never made them but always wanted to. I have never had Korean short ribs, what are they like? I have no idea what I am going to do with these just yet, LOL!
If there isn't a thread for this already, I will contribute to said thread.

There’re pinto beans, roasted red peppers, roasted corn, pepperjack and cheddar cheeses in there, among other things.
 
Tonight evening meal. Something easy to digest for hubby but with plenty of flavour. He's already chomping at the bit!



The recipe is from a book I have called Mango Soup, by Jenni Malsingh. It's a vegan Indian cookbook and yes there is a recipe for mango soup. (I'm fortunate to have a personalised, signed copy.)
