Technically yesterday but I was too busy drinking wine and eating cheesecake to post it 😂

Orange Cheesecake

This was so, so close to where I wanted it to be but as I ploughed through a normal - large sized slice that started off at ‘ooh lovely’ I reached a ‘hmm’ point and decided it wasn’t quite sharp enough to contrast all the cream cheese and sugar.

Back in the mists of time Delia Smith published her recipe for Orange Cheesecake and it was a firm family favourite.
A very simple recipe that punched well above it’s weight in the effort for reward category. Then the ‘concentrated fresh frozen’ OJ that was the pivotal ingredient stopped being produced 😔
I’ve wracked my brains and even tried concentrating OJ myself to try and make it again but it’s always paled in comparison. Unable to leave it be I recently found some ingredients that might do the job.

So whilst it wasn’t 100% I am excited that after some tweaking I could at last have a loved favourite back in the menu 👏

Key Lime Pie

The Carnation Sweetened Condensed milk version. Such a simple version and I love the sciencey satisfaction 🤓 of the lime juice coagulating the filling.
Key Lime Pie Recipe | Carnation
They have a vegan version on the site which I reckon is worth a go.
For my lot as its dairy intolerance rather than full blown allergy I added a decent amount of neutral flavoured ‘Milkaid’ drops which seems to have done the trick 👍
Yum yum 😋
Are these entries for the contest? They look beautiful!

Shaoxing paksoi noodles with green beans, cabbage, ham & pork fillet

And some forest fruit & vanilla gelato in the sun later

Lunch

Some thinly sliced sourdough with avocado, chutney and thinly sliced extra firm tofu.

Whilst I did the cooking (for evening meal), hubby did the serving because I was on the phone to my mum for an hour before our evening meal.

The result is a bowl of green instead of what I had envisaged... the spiced kale was meant to be to one side of the brown basmati rice, the lentil 'Indian' dish was to be to the other side with the fresh coriander already stirred in.

Yeah that isn't what happened...

Presentation isn't his best skill, nor is keeping it all in the bowl or wiping the side of the bowl down, so the first thing I did was to promptly put my hand in the lentil sauce that had missed the inside of the bowl when he ladled the sauce over.

Loving all those vibrant greens.

Amazingly no kale available at Morrisons or Ocado and Savoy cabbage they've stopped selling (online at least).
So I bought the bags of prepared M&S 'cabbage greens' I was absolutely shocked by how tiny and quite empty the packets are compared with how much you used to get.
I'll post a pic of a pack later, I was horrified!

Thankyou 🥰

The key lime pie tastes like cheesecake but contains no cheese.
The Orange Cheesecake was intended to be an entry but it's not a runner yet.
It was so close to ready I considered putting it in but ultimately it's just not quite there.

Heyho. I'm determined to get it to the right level and already have ideas on some tweaks 😊

We also get it frozen. That's my backup.

Can't do savoy cabbage. It doesn't like me sadly. I can time how long it doesn't stay put. Shame because I love it.

Made dinner for MIL Mother's Day and FIL's birthday. Really delicious: deviled eggs appetizer, Alaskan king crab with garlic lemon butter and filet mignon (medium-rare) entree with a side of rice and broccoli casserole, then orange marmalade cake with marmalade cream cheese frosting for dessert. I am stuffed! No pics, we were too hungry but everyone was happy!

I invited Mrs. Next Door Neighbor to join us for Mother's Day Linner at Mom's Senior Living Community, along with other Neighborhood Gal Pal's Mom, who also lives in the same place.

This was the cocktail for the day, Fresh Raspberry Hard Lemonade, delicious!
I'm certain that they just whispered "vodka" over the glass though :p:

I had been dreaming of Prime Rib for weeks now!
My plate ☝️
I also shared a small plate of assorted desserts with Mrs. NDN.
