Morning Morning, I've used Anatto powder for years to fake the effect of saffron, I've never heard about the oil.

I make it. Soak seeds in a bit of hot water. Drain and pat dry. Add oil of choice, stir and leave for a few hours. Strain.

Edit - you can also make it by simply heating the seeds in oil for a few mins then leaving to cool and straining. Easy!
 
I also like Vincenzo's recipes for authentic Italian dishes, he even (rightfully) criticizes top chefs for their Italian dishes.
This is my way to do it, I think it should be pretty similar to Vincenzo's. You are welcome to criticize as an Italian :rolleyes:

The Bolognese sauce that you made has made me hungry again! By the way, that bottle of Chianti you used is the same one I usually buy, as well as that oil.

I have no criticism, just a different point of view of course.
I saw that you sautéed the bacon first and then added the soffritto. I do the opposite, but it's a detail. Usually in the Bolognese sauce you add a little bit of milk, but not everybody does it. I do it even if sometimes I forget! But it's good anyway.
How long did you cook the meat sauce? I cook mine for a minimum of 3 hours, a maximum of 4 hours, but some people cook it for up to 5 hours, so it becomes very thick.
 
I think I need to work on my presentation! I did manage all of those ingredients apart from the grapes, just added tomato. cucumber, chopped peppers and Stilton because sometimes I am a glutz.

Hey, it looks like a great salad. It just pushed the limits of "Waldorf Salad" just a wee bit. Well, maybe more than a wee bit. But, you could call it a Marvin Salad, and I'd eat it.

I don't remember the case for the video, but usually I think I cook the sauce for 3 hours. If I do it for guests, I cook it much longer up to 5 hours in a larger cast iron pot.
 
Today is Veteran's Day, so I'm off work, and as many places offer freebies to vets as thanks, I've been taking advantage of some of that.

Before the pandemic, I'd plan my whole day around it, and throw in some Christmas shopping as well, like I'd get a free coffee here, and a free doughnut there, a free full breakfast somewhere else, then a free lunch, a free afternoon pastry, and a free supper, and a free ice cream or something like that, but I'm too tired for all that this year. Pandemic Blues, maybe.

So far, I've had a free breakfast from my local McD's (egg burritos, hash browns, OJ), and a free cup of coffee from the Starbucks in town. Yay for me.
 
Soprasetta Pizza.

With all the recent seafood pizza discussion, I got hungry for a pizza. I used a Boboli Pizza crust which allowed me to microwave prepare it. It included Soprasetta, diced Scallions, Garlic and Serrano Peppers, topped with Cayenne Red Pepper, Oregano and Shredded Colby Jack Cheese. It took a while to cut everything up and prep the pizza, but it microwaved in 3 minutes.

As I was anxiously awaiting a package delivery, I took no pictures and polished it off, so that I can deal with this package when it arrives.

I definitely didn't eat inside anywhere (not that we have very many dining rooms open), just got take-out.

Kind of fun because, I was the only customer in McD's, never had that happen before, and there was zero line at Starbucks, too.

Little Caesar's is very small, just counter service, no inside dining anyway, and there were five people in there, counting me, but because they were expecting vets today, I didn't have to wait. Walked in, ordered, handed it to me. In and out in 90 seconds. 😎
 
Last nights dinner. medium langoustines poached in white wine, potato wedges, green salad and some excellent sourdough bread. The bread is from a local bakery that is slightly off the beaten track. We found it looking for a tin we can use for pork pies. The oven is wood fired so you get a choice of crust. The young man who runs it know is the great grandson of the original baker. He honed his skills onboard various cruise ships. His sister has the same pedigree, she runs another jewel in the family crown called Ganache a small coffee and cake shop that she runs with her partner.

Tonight's meal will be Sausage eggs and home made baked beans. The beans are soaked so I am off to start the slow cooker. The toast I will put the beans on is from the bakery we found. It appears to be wholemeal with seeds on the crust. He called it Finnish Bread ?
