What did you cook or eat today (November 2021)?

Lentil soup, one of my favourites and so easy to make even in a hurry. Just boil together a cup of lentils (any colour would do but I prefer yellow, split lentils are ok too), 2 medium potatoes and 2 small carrots with one diced onion. No need to wait the lentils in water overnight, it usually cooks quickly. Boiling time for me is around 60-75 minutes. I mash it with a hand blender, add some olive oil and simmer for another 10-15 minutes and it's done! Enjoy :)

Deep fried pickles. I'd never heard of these until recently, and learnt of them via a YouTube channel I watch. It's not a food channel, but a motorbike vlogger that occasionally eats these at petrol (gas) stations in Tampa where he lives as he rides around the place. Anyway, a bit of googling and whatnot and this is the result here in my Aussie kitchen.

I make them on a regular basis. I usually use sliced pickles. I want to try pickle spears, sometime.

I only had the spears one time, and I personally prefer the pickle chips, but that's because the one time I had the spears they weren't crisp. The juice leaked into the breading and made them soggy. I imagine it's probably easier to drain the pickle chips properly than it is the spears, though I am sure that murphyscreek's were perfect. I can't imagine them being any other way, given his talent!

That was my concern. I put my pickle slices between layers of paper towels in the fridge for a few hours to lose some liquid.

hubby is off soup at the moment, so the since coming out of hospital it's been a variety of recipes...

last Friday and Saturday were the usual sweet potato chips in the air fryer, garden peas, fried egg and something for protein. I've genuinely no idea what it was he served that night but I wasn't impressed but supply problem mean our usual vegan sausages are not available...

 
then there were 2 nights of vegetable moussaka that he made. it's actually quite nice, we just need to work on the brown lentil flavouring to improve the overall taste. he made it because I'm still pushing my luck trying to do too much each day as it is...




The first night didn't come out of the container particularly well. he over did the bechamel sauce. but it was enjoyable and one to repeat.
 
finally we had 2 nights of one of my Indian curries rescued from the depths of the freezer. that's the last of it, so I need to make another batch up. it's easy enough just lots and lots of spices... Recipe - Vegan Indian Potato Curry it was served with some airfried tempeh. ideally the tempeh should have marinated in the curry but we can't win it all.



today lunch was eaten out because my physio had to cancel yesterday's early morning appointment and change it to a lunchtime appointment. lunch would have been late had we have driven straight home, so given how hard times have been for the smaller businesses, we are at the Greek pizza place across the road that's currently in the middle of a construction site... the standard sign saying businesses open as usual but you know it's hard for them. they know us so when I accidentally asked only for no feta, one of them came and checked that we actually meant no cheese full stop. there was additional cheese on it not mentioned on the list of ingredients because they assume you start with a margarita... and unlike many places when they omit ingredients, they bulk up the volume of the others so we had an excellent pizza. one of the best we've had on a long time. :thumbsup: . so tasty.
