Decent cream is very difficult to obtain here so I always substitute yoghurt. However, my method takes far longer than 30 minutes. Excluding marinating (which I prefer overnight), I guess around 1½ hours.

The last twice that I prepared butter chicken, I froze half of it in the marinade for later. Worked well.

My usual butter chicken recipe also takes longer and I marinate it overnight, but today I really didn't feel like cooking and I was cutting corners.

£50 pp without wine! I hope you really enjoyed it because they are seriously overcharging - that's up there with London Michelin star tasting menu prices. Quady Elysium Muscat retails for around $22 per bottle. These people are charging £82.50/bottle. Please tell me it was fantastic!
