What did you cook or eat today (October 2021)?

Today's meal was a layered salad with Romaine lettuce, Anaheim pepper, cucumber, radish, onion, mushroom, tomato, bacon, feta cheese and blue cheese dressing.

Tomato basil soup. My wife’s uncle grows tomatoes…so many that he can’t eat them all. They’re incredibly tasty, but we can rarely finish using them in salads and sandwiches before they go bad. Hence, soup. I’ve never had enough good quality tomatoes to make a soup before, and the results were terrific.

You need to freeze until you have time to Make pasta sauce or similar. We freeze all the time here.

Here too..skins and all..I just cut the cores out and toss them in a bag..when I am ready to use them I take them out and thaw them in a bowl and then puree the whole thing with a hand blender..little bits of skin are left, but it doesn't bother me..sometimes I run them through a sieve if I want something finer...
 
I had to grab food on the run, and a Taco Bell was on my path. Every once in a while, I have to eat "food" from Taco Bell to remember why I go so long without eating Taco Bell.

They call it "Taco Hell" for a reason. I never liked anything but their bean tostadas. The meat is like dog food, or at least what I imagine dog food must taste like. The smell and texture are quite similar.
