What did you cook today? (2015)

Today I cooked French toast bread pudding - maple cinnamon bread pudding with brown sugar for breakfast. My family prefers this over traditional French toast. I think it's more filling and more exciting, flavor-wise. For lunch I put together a quick guacamole with fresh lime juice, minced garlic, diced tomatoes, cayenne and sea salt. So refreshing and simple to make! And for dinner, we had leftover roasted chicken from last night so I just cooked some carrots with onions, garlic, ginger and maple syrup. For dessert (if anyone is still hungry!) we have my homemade Rumchata cinnamon ice cream, made with no eggs or cream - only evaporated milk.
 
So far all I've had today is cereal, but tonight I'm planning homemade mac'n'cheese with bacon and broccoli.
I got the original recipe out of one of my grandmother's old cook books so it's packed with full fat cheese, cream and butter, and then of course bacon makes everything better.
It's one of those meals I only cook once in awhile because it's so bad but so good!
 
I made a curry chicken dish by Jamie Oliver. It uses garlic, ginger, cilantro, yellow pepper, onions, curry powder and tumeric in the sauce with chicken drumsticks and chick peas. Absolutely packed with flavour and easy to make.
 
I made chicken and egg sandwich for breakfast, Fried bangus and Adobong sitaw for lunch, and Miswa soup with meatballs for dinner. My family likes it very much!
 
I boiled some rice and made a vegetable stew to go with it. The stew comprised of cauliflower and carrot sticks with peas and spices. Yummy!
 
I'm making sloppy joes tonight. A great meal for kids, I hide zucchini, red peppers, onions in the ground beef. Add tomato sauce, parmesan cheese, brown sugar, dry mustard, basil, oregano and worcestershire sauce. I serve it with a green salad on the side. Quick, tasty and healthy too!
 
I threw some ingredients together and came up with something really tasty.
1 cup Flour, 1 tbsp. cinnamon, 1/2 tsp. nutmeg, 1/4 cup sugar, 1/2 cup water, coconut for dusting, sugar syrup(1 cup sugar + 1 cup water) and oil for frying.
Mix flour, cinnamon, nutmeg and sugar together. Add water a little at a time until a thick dough forms, just soft enough to drop off a spoon in thick pieces. Heat the oil in a deep frying pan. Add drops of the dough into the oil and fry like you would a donut. Once it's done frying in the oil, place in the syrup, remove and place in coconut and roll it around so it has a nice coating of coconut. Eat and enjoy ... yummy!

Hey, your lucky to be able to get mutton. Its difficult to obtain here in UK. Where are you located? Top tip: you can add your location below your picture . Follow @SatNavSaysStraightOn 's instructions in the Lounge. Its really useful if people add location as its impossible to remember them all otherwise.I absolutely love curry and make it all the time.
 
I made pineapple rice and thick beef stew. I put in several spices in the stew and it came out thick and heavy. I like to do that sometimes and my family can't get enough of it.
 
some more bread. sourdough and not the usual recipes. which has just reminded me that I have some more to cook and had forgotten about them!

Right quickly a dippy sourdough bread (i.e. one for dipping in soup) so it was a 50/050 white/wholemeal bread made with milk instead of water and 2 tbsp of olive oil to give a softer complexion.

I also have some 100% dark rye sourdough being made at the moment and that is a completely different kettle of fish. 100% dark rye handles differently and I have no idea on how it is meant to be....
So this is a massive learning curve. there are 3 loaves being made. 2 are 100% dark rye with honey and toasted, soaked sunflower seeds in it. I am hoping for a Northern German/Danish style loaf but am expecting to be sadly mistaken! The other is a 100% dark rye loaf with nothing added. It is going to be interesting. I can't decide if they have had enough proofing or if they have risen enough. They are not really responding in the same way and today the temperature has been cooler than of late, so I have to take that into account as well. Only time will tell. I will probably cook them separately, so that I can give 1 loaf longer than the other (sunflower seed & honey rye sourdough) and take it from there.
 
I'm making beef and broccoli stir fry tonight with a black bean sauce. It's one of my kids favourite meals. Serve over white rice. Delicious.
 
I made a yummy stir fry of chicken, onions, red peppers and broccoli served over sesame noodles. The noodles are in a soy sauce, rice wine vinegar, sugar, garlic, oil sauce, sesame oil sauce. Heat the sauce and pour over noodles. Top with the chicken and vegetables. Sprinkle with chopped cilantro. If you like it spicy my husbands adds siracha to it.
 
This morning I kept it relatively simple, and made a turkey sausage, egg, cheese and jalapeno burrito with a little Tapatio brand hot sauce. And on the side I made some home fries, just seasoned with some Spice Supreme Garlic & Pepper seasoning and a few more dashes of the hot sauce. I've been trying out Save-A-Lot's newer "Tio Santi" brand tortillas which they started carrying in place of their previous "Nuevo Leon" brand they were carrying, which were much thinner and often tearing and getting stuck together. The Tio Santi ones are heavier (and higher in calories), but hold together much better. I have yet to try their whole wheat ones though.

As a snack this morning, because I couldn't wait to try them, I made up a small batch of potstickers I got from the Dollar Tree as well for only $1, and they were fantastic.

Right now, I've got some BBQ chicken thighs roasting in the oven for lunch, simply seasoned with a BBQ dry rub, but I will be basting them in some sauce shortly.
