This morning I was rather hungry, but wanted something different from my usual fried eggs and toast with homefries, or an omelette. Fortunately when I got up, I found some fresh ground beef in our fridge, about enough for one burger, so I decided to make a "Joe's Special" scramble. It's a breakfast dish that originated in California in the 1920's at some cafe/diner place. It's basically a scramble of ground beef, onions, garlic, spinach and eggs, topped with a generous amount of parmesan. You could also optionally have mushrooms added to it for a little more. I suppose if you wanted to make it vegetarian, you could grind up a bunch of mushrooms in the food processor and use those in place of the ground beef. Basically you just brown the onions and beef in some oil, add in your minced garlic, then once the meat is cooked through (you don't want it dark brown, just until the pink is gone), add in your thawed and squeezed out spinach and warm that through, then lastly add in your scrambled eggs, and mix everything together until the eggs are set and cooked through. Then top with parmesan. I generally have mine with some slices of fresh tomato on the side, and some toasted crusty Italian bread that's been buttered. For a slight variation on it, I will sometimes add some diced jalapeno in as well when cooking the beef and onions. It's not pretty food, but it's really tasty and it makes a lot, so be careful with the portion amounts.
