Yummy, baked beef roll. We call it beef Wellington. Nice mixed vegetables and roast potatoes go also well with it. If you want a really fancy sauce, try hollandaise or bearnaise sauce.
Tonight we have a Swiss national dish served on hot days. We have 34 degrees Celsius. We have Bircher Muesli. Rolled oats, mixed with fresh and dried fruits and nuts, yoghurt, milk. Love it, healthy and refreshing.
How come its so hot? I thought Australia had winter when we had summer!:scratchhead:
 
This morning I was rather hungry, but wanted something different from my usual fried eggs and toast with homefries, or an omelette. Fortunately when I got up, I found some fresh ground beef in our fridge, about enough for one burger, so I decided to make a "Joe's Special" scramble. It's a breakfast dish that originated in California in the 1920's at some cafe/diner place. It's basically a scramble of ground beef, onions, garlic, spinach and eggs, topped with a generous amount of parmesan. You could also optionally have mushrooms added to it for a little more. I suppose if you wanted to make it vegetarian, you could grind up a bunch of mushrooms in the food processor and use those in place of the ground beef. Basically you just brown the onions and beef in some oil, add in your minced garlic, then once the meat is cooked through (you don't want it dark brown, just until the pink is gone), add in your thawed and squeezed out spinach and warm that through, then lastly add in your scrambled eggs, and mix everything together until the eggs are set and cooked through. Then top with parmesan. I generally have mine with some slices of fresh tomato on the side, and some toasted crusty Italian bread that's been buttered. For a slight variation on it, I will sometimes add some diced jalapeno in as well when cooking the beef and onions. It's not pretty food, but it's really tasty and it makes a lot, so be careful with the portion amounts.
 
The reason is because I am currently in Switzerland visiting friends and family. You are right, it is winter in Australia that is why I escape to Thailand and Switzerland and go back to Australia beginning October.
That explains it! So what's cooking in Switzerland?
 
I cooked some noodles plus boiled eggs. I used a recipe that I got online. I enjoyed my food.
 
So far, I haven't even made a cup of tea. I haven't been downstairs yet, which is where the kitchen is. But, yesterday, I cooked a fried egg and toast, then for dinner, I made grilled cheese with cream of tomato soup. In between that, I made baked apples again, and this time, I added clove in with the cinnamon and nutmeg. It's another of my favorites, and I tend to use them together a lot.
 
We had mongo beans today for lunch and the leftover for dinner. Mongo beans is tenderized in a cauldron of water while the pork is also boiled in another pot. When the pork is tender, it is fried to crisp. A sautee mix will bring flavor to the mongo beans that is with the fried pork now. And for the nutrients, we pack it with moringa leaves that gives more flavor to the mixture in the cauldron. Serve it sizzling hot.

Today I have cooked vegetable risotto. It is quick and easy to make, and extremely tasty! Rice has to be one of my absolute favorite foods in the world.
 
Today I cooked simple dishes only for our dinner. For our soup we had a spicy steamed eggs. For our main dish we just had mushroom sauteed in canola oil with a little salt and a tuna pancake. And for our side dish we had soybean sprouts. No meat for today just healthy eating.

The ingredients for a Spicy Steamed Eggs are simple and this is just easy to cook...You just need whole eggs, soy sauce, hot pepper flakes, asian chives, green onion and water. Just put all the ingredients in an earthenware pot and mix together and cook for 5 minutes. After cooking put sesame oil and sprinkle sesame seeds on top. The earthenware pot is already your serving bowl that you can use on the dining table when you are eating. Serve this while it is still hot and this is really delicious!
 
Today I cooked up some Mexican style fajitas. Laying down at the bottom of the fajita was the salsa sauce, then topping with peppers, onions, chicken, tomatoes, lettuce, and grated cheese. Added some homemade guacamole sauce at the end, which brought that little extra final touch.

Perfect for a night in front of the TV or dinner with friends at home. Just make sure to have napkins around!
 
We had baked potatoes, fresh green and yellows been with oven baked crispy chicken. It was so good!!
I love when you can get fresh vegetables. It's my favorite time of year.
 
Today, I made a quinoa salad. :oops: I prepared about a 1/4 cup of uncooked quinoa and as it was cooking, I chopped up veggies. I chopped up half an onion with half of a tomato and a couple mushrooms and put them all together in a pan to tenderize them. Once the veggies were done, I mixed in the cooked quinoa and added garlic parsley flakes for seasoning. :wink: I proceeded to put all of this on top of a cup of baby spinach.
