What did you eat or cook today (December 2024)?

I heated a nice wedge of quiche for DH and made 2 of these preformed hash-brown patties fried in oil (1 for each of us). They were really good! After I had bought them (they come in a frozen package), I tried making one in the air fryer and it was meh. Frying in oil was the way to go!
 
Had a mix of veggies at lunch today: cauliflower, broccoli, russet and sweet potato

I've done that as well with the hash brown patties. At this point I make my own but they *must* be fried in oil to be acceptable.
 
Many years ago, I had a dish in local restaurant that we loved. The restaurant didn't last, but I (sorta) copied the dish at home, and we still enjoy it. We've named it Chicken Apollo, after the name of the restaurant.

Chicken breast on a bed of spinach, cooked with shallots and pancetta. Topped with melted Fontina cheese and sauteed mushrooms with garlic. The whole thing is drizzled with a rosemary balsamic glaze. Served with buttered papparedelle.

That’s my sister’s homemade spaghetti sauce (it smells exactly like walking into Pizza Hut around 1979), some linguine, and some chicken Italian sausage. I even gilded the lily with some fried breadcrumbs.
Mom used to put toasted bread crumbs on pasta. I love it. But don't do it often, cause no one else does.
