Clue: The item grows in the mediterranean but also in some parts of the USA.

This is much easier than you think! Its because the image is so close up and because of the way its cut which is confusing you.

This is nothing 'exotic' or 'esoteric'. Everyone here will have eaten it, I'd think.
Most of you (I would think) have this in your store cupboard.

The only preserved foods in jars I've ever bought or tasted (to my knowledge) are pickles (pickled cucumber), jam, jelly, or condiments, and I'm certain this is none of those.

My MIL likes hearts of palm, I've heard her talk about it. I don't think I've ever seen one but I have seen the cans in grocery stores. I vaguely remember the picture on the can is the same color, so don't know...is that it?
 
An olive?
Oh yeah I do buy olives. But it's not the color of any olive I've ever seen. Doesn't it look yellow or beige? Maybe it has a green tint that I'm not picking up?

The clues all point to your guess though.
