The only preserved foods in jars I've ever bought or tasted (to my knowledge) are pickles (pickled cucumber), jam, jelly, or condiments, and I'm certain this is none of those.Reprise:

This is nothing 'exotic' or 'esoteric'. Everyone here will have eaten it, I'd think.

The item grows in the mediterranean but also in some parts of the USA.
Further clues:
They come in two basic colours.
They are 'preserved' often sold in jars.
The dish in the photo is a salad.
Oh yeah I do buy olives. But it's not the color of any olive I've ever seen. Doesn't it look yellow or beige? Maybe it has a green tint that I'm not picking up?An olive?
