There are many ways to use them, because they're very nutritious. Green plantains are cut into 2" rounds, fried, smashed, then refried. "Torta de platanos" is in the recipe files under vegetables, and I'm currently experimenting a brain f*** and can't seem to post the linkI've only ever known to smash and fry so I'll have to explore a bit.
