Homemade Sandwich Meat

I have plastic liners as they came with the tins but I don’t much like cooking in plastic.
I will, in fact I do when I cook in the kettle or sous vide but I avoid it if possible.

The meat paste looks good. Did you dry the peppers off before mixing or just go for it?
I wanna see some slices!
 
I just mixed them in straight from the fridge. They drain pretty good after they're roasted and sliced.

Knife was a bit dull here getting the top off.

I just mixed them in straight from the fridge. They drain pretty good after they're roasted and sliced.

Not bad at all! That turned out really well, congrats. I’d totally eat that!
If you do end up buying one of the tins I should mention the larger tin is a pita. It takes a lot longer to reach temperature and the meat slices are too big for normal size bread!

Thank you! I'll order one of those cans. That kitchen knife is a Victorinox that's probably 30 years old +/-... 🤔

Thought so, it is my favourite knife, the fibrox handle makes it light and it’s just the right size for my hands.
It the one I chop fastest with by a country mile.
Mines about 20 years old.

That was the only brand my butcher would sharpen at the time. I recall I got the set on Amazon for like $80 and now I sharpen as needed. 👍

I used to sharpen them but one of my sons seems to have a real knack for it so I wait til he looks amenable and ask him to do it 😂

Both my parents would have loved that, and my long past grandparents (on both sides), as well as my 5 siblings (who are all still alive).
 
So, using a smaller diameter jar to allow for grease expansion prompted the use of these innovative and hi-tech spacers to keep the jar centered...View attachment 122379
I use those sort of high tech spacers as well as the upgraded version some people think is just crumpled tin foil 😂
 
I almost didn’t bother has I now have far more food in the house than I would want due to messing up the Christmas orders 🤪
But the pork was already in the bottom of the fridge and today was its last day.
Food waste is something that I dislike intensely so no matter how tired I’ll usually get stuck in and make sure it’s not wasted.

It’s only two tins rather than three this time because that’s what I had.

Left - the test splat because I had a jar of apple, pear and cider chutney that I bought ages ago and wanted to use up but wasn’t sure how much to put in (turns out a lot more than I thought).
And right - my treat for making the sandwich meat, I always leave a bit out for a burger patty 😋
That one’s chorizo flavoured pork. The hand mixer does a great job on keeping the meat moist.

Seriously, based on my last run I think you can speed up your process if you do like I did, somewhat. Pour off the fat when the cooking is done and you may just get your plugs to come right out prior to cooling them. Depends on how firm they are. Mine was 190°F so it was *done*. It's been about 4 hours and mine is sliceable. 'Course I've still got the first one to finish in front of it...
