Spinach, Bacon and Pine Nuts Pasta

I have been thinking of the kind of ingredients I would like to eat with spinach and googled these specific ingredients and of course someone has already made something similar. There were various salad versions but I wanted a hot dish . I'll buy the ingredients on my next shop, looking forward to making and eating it.

I've made it now, just enough for myself. It was as delicious as it sounds. Probably because I love anything lemony.

This is one we used to make rather a lot when I could have dairy. We changed the sauce over the years, which I will add shortly. Again, sadly I can no longer have the changed sauce either, with it being cheese based, but it matched the cheese used in the gnocchi which really made the dish something special.
I'm also hoping that nettles are an option here - though it can be made with any greens, we preferred it made with nettles and now is the best time of year in the UK or northern hemisphere to be harvesting nettle tops. I am still working on a ricotta alternative that is dairy free. I have recently seen a couple of recipes which when I'm a little better and have a touch more free time, will be trying. they are in a cookbook that I was given as a Christmas present this year, so it would be great to make one or two f those recipes!
 
Its judging time. This has been very difficult with 9 entries all of which I would be happy to cook and eat. In the end I drew up a shortlist of 3.

@The Velvet Curtain 's Recipe Scallop and Black Pudding Salad, a good dinner party starter dish and I'm a fan of scallops.
@MypinchofItaly 's My risotto with spinach and taleggio cheese. I hadn't thought of putting spinach in risotto before.
@ThatManViv 's Spinach Invasion which is a very original recipe.

In the end I'm choosing @MypinchofItaly as the winner. I can't resist that lovely green coloured rice with taleggio cheese.
I look forward to the next ingredient challenge.
 
Congratulations @MypinchofItaly! A well deserved win.:bravo: It was a great spinach challenge - so good to see original recipes and also members cooking and posting photos. Now its over to @MypinchofItaly to choose the next ingredient. To see what has been chosen before, go to the very first post in this thread. It doesn't really matter if you choose something that has gone before - unless it was quite recent. Just announce the new ingredient here and I'll do the rest.
