Fried Cauliflower Rice.
I was seriously tempted to add olives to this - because of the recipe challenge - which I think would’ve been delicious. But, I decided to play this traditionally. Well, except for the fact that I used cauliflower instead of rice. This contains a number of canned vegetables, and fresh ones that didn’t look like they were going to make it very long.

Besides the things you expect in a fried rice dish, I also added artichoke hearts and baby clams. It turned out really well...one of the best fried rice dishes I’ve ever made. I can’t wait until my kids try it. And, no, I won’t tell them that they just ate cauliflower until after they eat it. :whistling:
