Too ass-tired to cook:

Grilled chicken salad with spicy ranch dressing and a pretzel stick (with nacho cheese, for some reason).
I love nacho cheese and pretzels. I like to mix mustard with mine.
Forgot to post lunch:

That’s a wiener-bun with fries in the local parlance.
Finally a real lunch portion for lunch! I was worried about you with the 1 oz. bag of potato chips. I think they sold you more air in that bag than they did chips.

I was out and about before the sun today with loads to do.
I had read that our local "Hawaiian Food Truck" was going to be serving up Lau Lau Plate lunch ... I'm in!
Everything else that they make, with all humility, I make better, but I can't make Lau Lau because I can't get the ingredients here in Cowboyville.
I know damn well (the owner already told me so) that he's having his relatives back home in Hawaii overnight him fresh Keoki's brand Lau Lau from Costco and then re-selling them simply warmed up with the ambiguous two scoop rice, one scoop Mac Salad (which was awful) and a small cup of also flown in Lomi Lomi Salmon, which again, I make from total scratch WAY better!
But ya know...
So I waited in line for 45 minutes for this:

That Rice was the worst I have ever seen or eaten :yuck:
The Macaroni Salad I threw out as well AND the stupid 🤬 piece of Pineapple!
This is what I served for dinner this evening ...

I made a properly cooked pot of fresh Steamed White Rice and crisped up some of my homemade Kalua Pork to go along side it all.
I split the Pork Lau Lau between us and we couldn't finish!
I gave the Lomi Lomi Salmon to DH, I didn't care for it at all...
Funny, just the other day DH & I were talking about this food truck and how the only thing that we would get from them again was Lau Lau and there it is!
DH suggested that should they have this again, just ask for a Lau Lau and never mind the rest of that 💩 or just don't bother any more.
BAHAHAHA!

I'm making prosciutto wrapped asparagus. I wrapped the asparagus and lightly cooked it, then added diced orange bell pepper. After a few minutes I added red onion, cooked a few more minutes, then topped with mozzarella and goat cheese. Last few minutes will be chopped grape tomatoes and finished with pistachios. I previously used pine nuts but they're too expensive now. Finishing right now.

Yeah, we eat late around here.

Here's pics:

Vernplum's English Breakfast FAQ:

Q: Are you aware that English Breakfasts don't traditionally contain chips?

A: Yes.

Q: Are you aware those aren't actually 'chips' anyway, but 'fries'?
A; Yes.

Q: Could I substitute hash browns instead of chips/fries?
A: Yes, that's OK. So long as they harmonize with beans.

Q: What about 'country' potatoes - those half boiled, pseudo-fried skin-on red potatoes with limp onions in you find in lazy hotel breakfast buffets?
A: God, no.

Q: Is the configuration shown in Fig. 1 superior in every way to non-chip/fry offerings?
A: Yes.

Q: Are you repentant in any way because it tasted awesome?
A: No

Toast or spuds with a fry up, you can't have both. Pick a lane. :whistling:

The OMWC nosey folks want to know ...
Well, you made me look up lau lau... :D

And there's two of them (I'm a busy guy) but who knows how long that will last. As one of them shrewdly observed, my late wife is a tough act to follow. I may stop trying, lightning rarely strikes twice in the same place, but for the moment, I still have a shred of optimism left.

Here's what the other one had last night (I had a mushroom version):
