Right now, I'm making pork and sauerkraut goulash, and it starts with a cup of garlic and six pounds of onions. One of the instructions says to cook the onions and pork down "until the pan is nearly dry."

It's been at a strong simmer for a couple of hours now, and it's still nowhere close to being nearly dry. There's a lot of water in six pounds of onions!
 
Last nights dinner cooked by Dil was spectacular. It really exposed my pathetic camera skills. He stuffed the chicken with a very spicy farce, trussed it. Then he poached it with veg till cooked. It was then blasted in the oven to crisp the skin. The stock was used to make the rice pilaf with fruit and nuts. The cooked vegs is blitz and mixed with other ingredients and spices as a sauce shown in the bowl. The other bowl was some sort of tzatziki. Pud was walnut baklava with ice cream. It was all amazingly scrummy. Thankfully Trines friend is coming out for 4 days so we have a break to plan a reply. NB he also made baked stuffed aubergines but we did not get around to those. Dil has no portion control.
