Christmas breakfast was biscuits, bacon, and over easy eggs.

The other Christmas plate pattern.

Christmas appetizers were green olive poppers, stuffed mushrooms, and two new apps. Brie and cranberry bites (were good, but the recipe/technique needs to be tweaked - puff pastry or pie pastry, and a smaller pan). Stuffed dates - we loved these. They got a little browner than intended.

Christmas dinner was eye-round roast, steamed baby spinach, Yorkshire pudding, mashed red potatoes, and burgundy pan gravy.

Unfortunately, I got up with a migraine Christmas morning. I did manage to get a bare bones dinner cooked since it has become easier to deal with cooking myself even when i don't feel good than to have Craig cook. So, we had the prime rib, mushroom bread pudding (he did pull the crusts off thick sliced bread and stick them in the oven to dry out after our coffecake baked) and country style green beans. Told him if it wasn't Christmas and everything was closed, we'd be getting delivery or leftovers, which is what we'll do today since the headache is being stubborn about going away totally.

We're going to have a cold snap for us, highs in the mid to high 60s (no snarky comments from you northern people :D ) through New Year's, but pugs will get to have the bones and then a bath after, plus they got a few bites of prime rib last evening so that made their Christmas.

Started the day with hotel breakfast again. They are back to egg pucks and sausage. The had some English Muffins, so I made a makeshift Egg McMuffin.

There are some decent restaurants near the hotel, and they will be open tonight, so I'll do that for dinner. I'll try to remember to snap a photo before I dig in.

Oh, I forgot to post my dinner from Saturday night -- late Saturday night. I went to this nice pub near the hotel, that had a guitar player and a singer (both old farts, like me). They were very good. They did a cover of Little Wing by Hendrix. You gotta' be good to cover Hendrix, or you'll get run out of town.

I ordered some Baja fish tacos. They were good, but the batter was a bit heavy. I couldn't finish them. The fries were perfectly cooked.

Thick Spaghetti Cacio e Pepe with tinned Smoked Oysters on top
Not for me, I'm allergic to Oysters, but DH was in LOVE!
Served with some homemade bread from one of my Gal Pals

[edit - please don't pay any attention to that sloppy plate, I mixed everything in his pasta bowl to save on clean up - he doesn't care hwat it looks like, just what it all tastes like ]

Okay, now that is a vegan dish I could dive into. No fake meats and cheeses, just good veggies and a hearty broth. Mushrooms make a good substitute for meat, to me, without pretending to be anything other than mushrooms. I read the recipe, and I may actually make it when I'm in one of my veggie moods. :okay:

Actually, I can see adding some slow cooked beef to that, and it being good, but I don't think it needs it.

The original dish is either beef or lamb I believe and has been made vegetarian for the recipe book I used. I've made it vegan due to my allergy.

I added extra special mushrooms (4 packets of dried mushrooms on top of the fresh mushrooms) given the occasion this year, but any good mix of mushrooms works really well. You found easily just stick vegetarian and use butter instead of oil. Obviously I can't so used a soy yoghurt/acv mix to give a similar taste. It's not a dish to go lightly on butter if you can eat it! I don't add 1tsp of sugar. We find it doesn't need it for our tastes.
