What did you cook or eat today (February 2025)

Beans and cheese on toast...
That was a favourite of ours. Getting the cheese to the right level of bubbling and browning however was always a problem. It killed so many dinner plates. They'd crack when exposed to the heat of the grill.
 
I know you have a recipe for that somewhere on CB, right? I mean the cake. I think the citrus curd was recent. Actually, links to both would be nice, thank you in advance!
Recipe - Blood orange drizzle loaf cake
Just switch blood orange for lemon.

My orange curd was made using Nigella Lawsons lemon curd recipe from her book ' how to eat' , I just swapped it for mixed citrus juices .

Forgot that I made a quiche 2 days ago.
That's what I made today - quiche. Wife's Canasta afternoon, so I always get to cook something.
Quiche was a few strips of bacon, diced really fine and then rendered. Onion, half a packet of Swiss chard, a few leftover sundried tomatoes, a couple of roasted peppers and a bunch of cheese bits that the supermarkets sell as leftovers. Pie crust - definitely homemade. 200 gms flour, 100 gms butter, pinch of salt, enough water to bring it together.
 
As DH & I were out and about running errands on Monday, we started a discussion on which is better:
Jersey Mike's or Jimmy John's
So I made an executive decision - we had a goodly portion of the Jersey Mike's Italian Sub leftover, so I did a fast drive-through at Jimmy John's for a Giant Italian Night Club to compare.

We still have some of the Jimmy John's sandwich left, it's that GIANT! :laugh:
We both voted for my homemade version on bakery bought bread :D
 
I was hungry in the night last night, so added the sweetcorn as well. It's chargrilled with rose harrisa. We also tried the Indian lemon chutney as well. Hubby likes it as is. I need a little bit of sugar adding to it, so I'll let it be for a week or two before adding a tiny bit of sweetness to it.
