What did you cook or eat today (February 2025)

YUM!
I've been really ono (that's Hawaii speak for "I really want to eat...") for a Chicken Cutlet (aka Katsu) with Three Cheese Tortellini and some kind of veg for dinner.
DID IT!
 
One of America’s finer happy accidents (purportedly) Tuna Melt 😋
Used Yotam Ottolenghi’s tamarind cheese mix on top and it was a huge hit. Even my son who doesn’t like to cook said “Please can you give me the latest version of this recipe?” !!

Then I decided maybe some crunch in the form of crispy onions sprinkled on top might be good.

I can recommend that move!

It’s great to get vegan cheese melting so well. Indistinguishable from the way normal cheese would melt 👍
I think the tamarind cheese mix would work really well with most protein and also melted over some veggies like cauliflower or broccoli.

Brushed a pork tenderloin with apple butter. Tossed it in a cast iron skillet with a little oil and a lot of butter and some rosemary. Turned out way better than I thought. Deep fried tator tots. Tossed in salt and pepper. Topped with smoked Gouda, queso and green onions. Had a slice of a peanut butter pie I made. Going to have to put in overtime at the gym tomorrow
 
I had yoghurt, fresh pineapple and artisan honey for breakfast.
Then I put butter, flour and a pinch of salt in a bowl to make pastry for a quiche. That was 9.30.
Suddenly, the day took hold of me and it was 2.45pm, a class in 45 minutes, then a cousin arriving at 6...
Snatched some cooked potatoes out of the fridge and thought : "loaded fries"...
bacon, potatoes, onion, some fresh chile peppers, stuck it under the grill with loads of cheese on top. Great.
I'm half way through and RIINNGGGGG!! Student arrived 10 minutes early.
