I think we were confused because you said 'mashed'. Endive (chicory in the UK) is a crisp tightly packed leafy head of lettuce. It can of course be cooked until tender - delicious! But I'm not sure how you would mash it. I think you could probably puree it, though. Maybe you used the root of the endive which is also edible?

Just to ad more language confusion, celeriac is commonly called celery root here. Chicory here is not the same plant as endive, although sometimes called curly endive. Chicory is kind of a weed, planted in fields for livestock to eat. It is also used in coffee blends in parts of the south to make the coffee stronger (cajun coffee).

We had a late lunch of takeout Cuban sandwiches, but only ate half because they were pretty good sized. So, we ate the other half for dinner.

Have eaten a cuban in Miami AND Tampa? There is supposed to be quite a "debate" about who makes the best.

Wife made herself some toast from a cheesy bread we bought yesterday, the smell got to me, so I grabbed a piece as well and toasted, then butter and peanut butter and my own home made jam/jelly. It was heaven, with a glass of milk.

We make them at home quite often from a native Cuban's recipe and I think they are the best, but there are a few restros close that make pretty good Cubans.
 
Sometimes, I'll slum it with a supermarket pizza:

I've even done it with a Totino's Pizza. :ohmy: I saw it as a challenge.

For those not familiar with this delicacy, a Totino's Pizza is a frozen pizza. They cost 99-cents each. Kid's like them, and starving college students eat them to survive.

I started with a cheese pizza, and dressed it up with toppings -- mostly peppers and herbs from my garden, but I think I used mushrooms, and maybe some sopresatta I had leftover from a calzone I made previously. It was a few years ago, but that sounds about right. I do remember it was actually pretty good.

Last night Porchetta, I split a piece of pork loin and wrapped it in belly pork with the usual suspects. I am still learning the gas Weber, I used their rec temps and timings. Next time I will still use the initial blast but cook it on a lower temp for longer. We ate it cold for dinner with a salad of grilled Aubergines and Peppers also my fav cabbage salad. Pud watermelon. 7 more days of the diet.

Chicken Thai salad for main with pate and chicken croquettes for entrees. Apple crumble for dessert. My son txt me his 6week diet was over and he was hungry.
Leftovers were taken home. Pic tomorrow as I'm busy at the moment.
