No pud lol. Shopping tomorrow here, I'm putting water melon on the list.

We ran out mate, it was very hot and still so I ate the last for lunch. I shot down to our friends shop in Split 3 yesterday morning early. He send his thumbs up for reminding me.

Do you have a thermometer to check them? If not, a skewer will work. It should slide into the potato with no resistance.

No, I don't have a thermometer. I used a knife to check on the potatoes.
It is probably my oven,it took them about 3 hours.
They were delicious. Not as soft mashy as I expected, but soft enough.
And so sweet, intensely sweet. Like a hokkaido squash almost.
I found arugula with lime juice plays well with them, cottage cheese too.

Will be brainstorming for the challenge.👍
 
I'm in MDW from 8:25 to 11 providing there are no issues. I don't like hot dogs...but I have 2 granola bars in my bag. I get into CLE by 1 p.m. I'll be ok.

The granola reminded me of a trip to Sofia several years ago, when I had half of a large bag filled with granola bars, fruit bars, peanuts, not just for the flights there and back, but also for snacks inbetween durimg the stay. It saved me lots of walking.
I was worried I might not be allowed to ...but it went fine.
 
Tried a new recipe for keto crackers. Flourless and vegan. Love the crunch.

It was late last night, way pass my bedtime when I got them out, so I only tasted them warm. I will have them with avocado slices this morning.

Curious if they will hold or crumble.
 
Some things never go as planned, out in wife's car and she says casually, swing by my work, the cook left me some leftovers Chinese. I didn't expect much being she is an Asian chef when I opened containers stir fri chicken with veges and also egg fried rice. Both were amazing and all gone. She even left over ginger sponge and cream. 10/10

That three hours does not surprise me at 275F. That's fine. They will not be mushy right out of the skin, but should mash easily to a creamy texture -- with no added liquids -- just a little time and effort.

And, yes, the natural sweetness really stands out, but not like sugar was added. It is very natural sweetness. I was amazed at how naturally sweet mine were right out of the oven. I don't have a "sweet tooth," but naturally sweet fruits and vegetables get my attention.
