What did you cook or eat today (July 2023)?

Is that just onion and bacon with the greens? Looks wonderful. I like to do bacon and potato with baby spinach.



Mom always made leftover pasta this way. I have more for breakfast or brunch today.
There's also a few garlic cloves in there but yes, 1 strip of bacon cut into pieces and about 1/3 of a mediium onion. I like spinach, too. My grandmother made greens but wayyyyy overcooked them (many people do). I found that they are delicious just lightly cooked. The potatoes sounds like a nice addition.

I only cook my greens (especially broccoli rabe) just till they turn a bright color and are tender crisp. I won't reheat my broccoli rabe, I eat leftovers cold, so I don't overcook it. Sometimes I cook a diced potato in the broccoli rabe liquor till tender and then add the cold broccoli rabe. I HATE overcooked dark mushy greens or any veggies that are mushy.

Same! My mother and grandmothers overcooked vegetables all the time, even if they cam out of a can (yuck). I dislike canned veges.
 
I saw this recipe that I adapted on YouTube for Instant Pot Congee or as I call it Jook.
So easy, just dump and go.
I left it in the the `fridge to cool off before divvying it for the deep freeze.
My Soup stash in the deep freeze is totally depleted !!!
Gotta work on that...

I used half the amount of Chicken as called for and got 8 one cup servings.
This should last me for a while.

Same here. I judge when my veggies are done more by the colour than anything else.

I used to have a coworker that liked to look at old cookbooks - apparently she had one that recommended boiling your veggies for an hour! 😱 I could not eat them if they were that overdone. Ew ew ew.

Mum used that same method plus a heaped tablespoon of salt in each pot.

I cooked Rogan josh last night. With new potatoes. Very yummy.
My bestie came and picked up leftovers. He loves heat.
Lunch today at artisan bakery steak and shrooms pie and a club Sammy. Really
good.
This company supplies air new Zealand some of their food.
I used to deal with them 8 years ago.
