What did you cook or eat today (June 2021)?

Made my hubby and I an omelet to split for lunch (breakfast at 2 p.m., really). Sauteed mushrooms, peppers, onions, ham, and cheddar.

Leaving for Texas Wednesday, hubby can't go with me unfortunately. I'll be gone 10 days.

I’m leaving on Wednesday too, but for Rome. I’ll be gone 10 days too!

No, my aunt was close with the family, though, and my cousin who she lives with now is a neighbor of Al's.

I am hoping my aunt hangs on until I get there. I won't be able to get there until Thursday afternoon, my flight arrives Wednesday night and I am staying with my sister-in-law (in Houston) overnight. My oldest brother in Florida is going over Monday but I won't get to see him since he leaves Wednesday afternoon.
 
I got up really early this morning, had coffee and no breakfast to start. I watched a movie, hung out and then went to the VA to get my first of two moderna vaccine shots. I had 2 Jimmy Dean breakfast biscuits microwaved at the the gas station convenience store before getting to the VA.

The moderna vaccine shot has the same side effects that were listed for Johnson and Johnson and those side effects described something similar to what I experienced when I caught the actual virus back in February 2020, but a bit tamer. Thus far, I have had zero side effects, possibly, because I had already had the actual virus and my body was ready, willing and able to deal with it all.

Today's meal is going to be light. I napped for a part of today to make up for having awoke so early. So, I had a small salad with cottage cheese. Additionally, I consumed a good part of the remaining Chocolate Strawberry Pecan Nut Roll that I had made. Again, it tasted great, but I wasn't happy with its appearance ( it looked like a big pastry burrito ).

I didn't have any issues with my first shot of Moderna. My second shot I had mild reaction, just a little soreness at the injection site and I was a little tired and cranky for a few days. Hubby and I also thought we may have had the virus back in November of 2019 but we can't be sure. I think you will be okay.

I am really happy you got the shot. I was reading an article today about a man who didn't go get vaccinated because he never went anywhere and people didn't come to his house (according to his grieving sister), yet somehow he contracted the virus and died. So many senseless deaths. And just because someone may have had the original strain of the virus doesn't mean that they won't contract one of the mutations, like the Delta variant.

I am wondering if there will be fewer right-wing conservatives left in the US after the Delta variant runs through our country.

Hubby is making chicken cordon bleu for our dinner. He is pounding out chicken and it's flying everywhere, LOL.
 
One suggestion. Butterfly those chicken breasts -- make them thin. You want a good char to meat ratio for fajita meats, and cook them "hot and fast" (don't overcook them, or they will dry out).

They've been sliced in half once, but I think they're still thick enough to butterfly. Thanks.
