Sublime seafood bisque at a poolside restaurant on San Pedro island, Belize. I honestly have never seen a seafood bisque so packed with freshly caught seafood before. Octopus, shrimp, clams…perfect. The ginger and cilantro give it an extra layer of flavor that I wouldn’t have thought of adding to a bisque.

I cook fajitas a lot -- beef and chicken. The vaqueros (Mexican cowboys) originally cooked fajita (skirt steak) on campfire coals. I have to admit that I usually cook my fajita meats in a cast iron pan, lubed with a high smoke point oil. Cooking over flames on the grill is a plus. With beef skirt steak, I use a screaming hot pan, so I get a good char, and a medium rare inside. Obviously, medium rare chicken is a bad idea. For chicken, I dial it down to medium-high heat. You should still get good browning, but you will have a lower risk of burning or overcooking (you know your stove better than I do). Thin pieces of chicken breast will cook fast, so pay attention. If you cook the chicken on the grill, lube the meat (just lubing the grill is is not a good idea with chicken -- it will stick).

Pay attention, and use your cooking instincts, grasshopper. :happy:

Dropped wife at rugby so I had to go past this bakery that the car knows and it pulled in there with no prompting. Cornish pastie not with swede though but it was nice. Some guy asking for money outside the block of shops, but he looked at me and turned away, I must give off that " don't even think of asking." Look.

Leg of lamb taken out the freezer, I'll bone it later or tomorrow, roll it and tie it for ease of carving. I'll do an onion and sage bread stuffing as well. Roast meals for Sunday night dinner. This is quite big, and halal killed bought from halal butcher.
Soup will be made with the bones.

Sometime, when someone asks for money (and seems sane), buy them some take out food instead and sit down and eat with them. I did that once, and it turned out well. We ate on a curb and talked. He was very nice, but as we talked, I could tell he had some serious issues I couldn't deal with, and I have to admit I was uncomfortable at first, but I got to see him as human. As a man, I wanted to fix his problems, but I didn't know how. But, he had a good meal, and he was grateful -- plus, I got a good lesson in how my problems are not as bad as they could be. I hope he got the help he needed, and is doing okay today.

Do you get a chance to sit down and talk to the people you cook meals for? I would like to volunteer to cook at a "soup kitchen," as they are called here. But, I would like to sit down with some of the recipients and just talk with them. No agenda, just get to know them. If I can help them, great. If not, we had a pleasant meal together.

Yes I have that chance to talk to them and I also look for it. We also help them with legal issues.

I've done that a couple of times. We have a few homeless people who congregate near the little knot of fast food restaurants next to our offices. Once, a guy came in just to use the bathroom, and some people behind me in line grumbled a little, so on his way out, I offered to grab him a meal if he wanted to go have a seat, then we had lunch together.

Didn't talk about much, but at least he got some hot food, and he got to eat inside in the A/C instead outside for a change, maybe.

OMG Belize? Now I'm really jealous. MypinchofItaly is going to Rome, you're in Belize...I get to enjoy refinery row in SE Texas.

However, if you get a chance, check out The Wheelhouse in Port Neches. It is right by the river at Port Neches park. Good seafood. Live music on weekends.

I still don't eat in restaurants, but thanks. I'll be staying the night in Port Neches during some of my visit, though, then going to see my aunt during the day. The main purpose of my visit is to spend time with my cousins and say my goodbyes to my aunt who is dying. I'll probably do a lot of cooking and cleaning to help out and just try to be supportive.

Making potato hash with eggs for breakfast today.
