What did you cook or eat today (March 2023)?

It was one of those days today. I've been so hungry all day... so a large salad was called for. Let's say nothing about eating our evening meal an hour earlier than normal!

So Persian Herby omelette with walnuts and barberries, a thrown together tomato, onion, garlic sauce with a new pea protein "meat replacement", roasted aubergines that melted in the mouth (1tbsp of olive oil shaken in a bag with s & p, airfryer for 15 minutes at 180°C tossing twice) and the salad.

Just home grown tomatoes, red onion, home grown cucumbers, lettuce, red & green pepper and some salad dressing.

Hopefully I'll make to bed without getting too hungry tonight. There's 40g of protein in that little lot. :laugh:

Back on the diet tomorrow, lol.

670kcals on that plate alone. That's more than ½ my daily allowance...

"Back in the diet tomorrow" is one of those (British? ) sayings that basically says "I ignored the calories today, I'll do better tomorrow". It's not necessarily unhealthy, just way too many calories when losing weight. If I was at 2,000kcals a day it would be fine.
 
I love hearts of palm although they are not commonly eaten in the UK and not sold everywhere (I'm talking about tinned). They are indeed super low calorie.
When my husband was at the store with my list he texted me “what the duck are hearts of palm?!?!?” I don’t think he’d ever heard of them before!

(And yes, he actually said duck - autocorrect strikes again!)
 
Salvage of last night’s meal. Rice, corn salsa, guacamole were all still good…I got husband to fry up a couple eggs and we had “breakfast” burrito bowls for lunch.

And yes, you can see the corner of last night’s pizza box!
