Chicken and andouille gumbo

I've been meaning to make gumbo at home, that looks great!

It's really good. It's Paul Prudhomme's recipe. The link is his recipe. I remove the chicken skin, as well as excess fat. We also use just thighs rather than whole chicken. Make sure you have all prep done and utensils handy before you start the roux. It can go from perfect to burned in an instant. If it starts to get away from you, pull the pot off the heat and let it cool down, but keep stirring!

My issue is that I can't get fillet powder anywhere here. I can get okra, but I'm not sure if I will like the taste/texture.
 
That still doesn't tell me who Ted is

I hear that. I hate okra but it's the texture for me. But filet is powdered sassafrass leaves, you can't find them? You could pick out the okra after it's thickened the gumbo.
 
That recipe doesn't use filé. Not all gumbos use filé or okra.
Oh that's great to know! I will definitely try it.

Edit to add, I was always afraid that a gumbo without fillet or okra wouldn't be a real gumbo, but if Paul Prudhomme doesn't use it then that makes it easier.
