Mung dal with aubergine & tomatoes served over broccoli and cauliflower.

Caprese with roasted/skinned yellow and red bell peppers instead of tomatoes, plus a sweetened balsamic drizzle. The long Marconi peppers from the farmer's market, an Italian heritage variety, roasted/skinned, with a stuffing of onion, garlic, Italian sausage, fresh bread crumbs, with red wine and chicken broth to moisten, topped with some fresh mozzarella and grated Parmigiano Reggiano.
