Hubby managed to cut the cauliflower and broccoli smaller tonight, so I got to eat!

I'll have to make some more vegan miso cashew nut cheese sauce for next time. That was the last of the current batch.

He opted for the "sausages" which are nice if I remove them from their skin. Their skin is a little weird to me never really having eaten meat sausages...
 
Couldn't be bothered to cook today so from the supermarket a prepared spatchcock 'Spanish Chicken' ie they threw a lot of paprika and lemon at it, with pearl potatoes which I also threw a lot of paprika at 😆 and tenderstem broccoli that wasn't so tender stemmed and I had to chop the ends off. It was tasty enough for an easy assemble meal.

The cooking instructions stated 190 degrees (374f) for 1 hour 20 mins. It was a plump chicken but even so 1 hour 20 for spatchcocked?! So I put it on 180 for 1 hour. I imagine 10 degrees hotter and 20 mins longer can only mean it's meant to be served cremated 🤣
 
Hubby raided the freezer and found some Persian Onion Soup which he poached 2 eggs each in (instead of fried eggy bread). We added walnuts and sliced apricots to this version. 😋

I am thinking I might make a nice tahdig tomorrow. It's due to be cooler and overcast, so having the oven on won't be an issue and I fancy some comforting rice.
