I added salt and pepper to the fish prior to poaching. Then added more salt at the table though not a lot.
This one doesn't look as good. I used a roux instead of a typical corn starch slurry as a thickener, as I think it performs much better and need far less, but it does make it "cloudy" because of the flour in the roux.
Omg this looks so good. Put some hot sauce on this.

Dinner this evening was an utterly sublime Chateau Briand. Barely cooked in the middle and still bleeding. Garlic mushrooms and twice cooked potatoes.
