The CookingBites recipe challenge: avocado

On Wednesday, I pruned the oregano bush. Had loads of the herb so I put it into little bags and gave it away to the neighbours. One lady brought me a lovely avocado and another, a bag full of passion fruit.
The avocado was perfectly ripe today so I thought I'd better do something with it. I thought of a creamy vinaigrette, but then decided I didn't want to use mayo or yoghurt, so I used passion fruit.
Avocado Salad with grilled vegetables and passion fruit vinaigrette
This was divine, even though I made it myself :D the grilled vegetables added a tiny bit of smoky flavour and the fruit vinaigrette offset the buttery flavour of the avocado. The sunflower seeds added an interesting bit of texture.
I placed half the avocado in the middle of the plate, but you can see in the 2nd photo that it was perfectly ripe.

Passion Fruit. I've seen it at the supermarket but never tried it. I'll have to explore that. Your dish is attractive to the eye.

Ok, time for my next one:

Recipe - Mexico City Sandwiches

Again, I did not personally sample this (I had one minus the avocado), so I must rely on MrsT’s astute palate for the review.

I’ll sum it up this way: “I love the taste, but I hate eating it.”

That’s down to how messy the sandwich is: wet tomatoes, slippery avocado slices, and two runny eggs make for a sloppy supper, and neither of us are too crazy about that.

She did say, again and again, how good the sandwich tasted, she just wished it wasn’t such a squirter.

Sorry those pics aren’t any better, but I was in a rush. MrsT is meeting with clients this evening, so I had to hop to it.

This challenge is torture for me. I've tried not to click on it.
I LOVE avocados but only eat them when I'm in Spain because my son has anaphylactic level allergies to them. Also to pomegranate.
This pic has sent me over the edge! I think I'm about to book a flight to Spain so I can eat this 😂

May I make a suggestion that instead of cutting roll in half to cut a wedge out of the top, clean out some of the bread innards, leaving a shell thick enough to contain the mess, and eat it that way. Win, win for Mrs. TR, less bread carbs!

Can't you go eat one in food at a restaurant and wash your hands/brush teeth after?

I eat avocado almost every time I go out for breakfast but if I went out for breakfast without them while they're staying here they'd be put out so the summer is an avocadoless 3 months, except this summer they came home in May n won't be leaving til the end of September!

Recipe - Whipped Avocado Dessert

Couldn’t be simpler - chuck three ingredients in a blender (or use your trusty stick blender like I did), whizz it up, top with some spray cream and a little zest if you’re feeling fancy and there’s dessert, done.

Keeping with my tradition of not eating avocados, let’s turn to MrsT and see what she has to say:

Me: Here’s your mug of tea, and I ha—
MrsT: Where’s my applesauce cake? I know you set aside two pieces before freezing the rest.
Me: Never mind that, I made this nice dessert instead. Try that and tell me what you think.
MrsT: It looks like pistachio pudding. Is it pistachio pudding?
Me: No, just try it.

<Tastes a half-spoonful>

MrsT: It tastes like…sweetened avocado.
Me: Yeah, but do you like it?
MrsT: I’d rather have my applesauce cake.

I feel I must quibble with the Creative Naming Department at Betty Crocker - “Whipped Avocado Dessert.” Really? That’s it? That’s the best they could do?

How about “Avocado Dreamy Whip” or “Avocado Cloud Cups?” Let me guess…if they’d had their way, Eggs in Purgatory would have been called “Some Eggs I Slapped Down in a Pan of Tomatoes.”

I saw a brownie recipe that had avocado in the batter...I guess it makes it healthier?
 
I have entered a lot of good recipes in challenges where a different ingredient was the challenge ingredient and these recipes contained avocado, but I can't enter them. Then I have other things I make regularly that contain avocado but are not anything special and the avocado is not more prominent than other ingredients, so I'm not going to bother entering them.

Here's my basic turkey, bacon, cheese, lettuce, tomato and avocado slider. Not an entry, though.

I do have some more complex and unique ideas but I'm waiting for my avocados to ripen!
