Black beans, peppers and aubergines with jälapeno and garden herbs. It was dished up with rice.

Our dinner plate looked rather pale tonight, saved only by beets that I roasted yesterday. I had the oven running, so why not? Anyway, tonight's supper was boneless pork loin and sauerkraut in the slow cooker, mashed potatoes, braised cabbage with bacon, and those colorful beets. Perfect cool-weather comfort food.
