That'll work. My son does it on his Weber.Yes and no. I cook chicken thighs on the grill (bbq) all the time. I use indirect cooking. On the charcoal grill, that means putting the hot coals on one side of the grill, and the chicken on the other. On the gas grill, I light two of the three burners, and put the chicken over the unlit burner. Either way, you avoid burning your chicken with flair-ups from dripping chicken fat.

I mixed some hickory wood chunks in with the charcoal for a smoky flavor.
